Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 1/2 cup onion, finely chopped
  • 8 ounces mushrooms, sliced
  • 1/2 cup Marsala wine
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Pound the chicken breasts to an even thickness of about 1/2 inch.
  2. In a shallow dish, combine the flour, garlic powder, salt, and black pepper. Dredge the chicken breasts in the mixture, shaking off any excess.
  3. In a large skillet, heat the olive oil and 2 tablespoons of the butter over medium-high heat. Add the chicken breasts and cook for about 5 minutes per side, or until browned and cooked through. Transfer the chicken to a plate and cover with foil to keep warm.
  4. In the same skillet, melt the remaining 2 tablespoons of butter. Add the chopped onions and sauté for 2-3 minutes, or until softened. Add the sliced mushrooms and cook for an additional 3-4 minutes, or until they release their juices and start to brown.
  5. Pour in the Marsala wine and chicken broth, and stir to scrape up any browned bits from the bottom of the pan. Simmer for 5 minutes, or until the liquid is reduced by half.
  6. Stir in the heavy cream and chopped parsley, and return the chicken to the skillet. Simmer for 2-3 minutes, or until the sauce has thickened and the chicken is heated through.
  7. Serve the Chicken Marsala hot with your choice of side dishes, such as pasta, rice, or roasted vegetables.
