Total Time: 20 minutes

Ingredients

  • 4 (6-ounce) beef tenderloin filets
  • 1/2 cup unsalted butter, at room temperature
  • 1 head garlic
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (205°C).
  2. Cut off the top of the garlic head to expose the cloves.
  3. Drizzle with olive oil and wrap in foil.
  4. Roast for 30 minutes or until soft.
  5. Remove from oven and let it cool.
  6. In a medium mixing bowl, beat butter with roasted garlic, parsley, thyme, salt, and pepper until combined.
  7. Transfer the garlic butter mixture onto a sheet of plastic wrap and roll it into a log shape. Refrigerate until firm.
  8. Heat a large cast-iron skillet over medium-high heat.
  9. Season the beef filets generously with salt and pepper on both sides.
Add 2 tablespoons of olive oil to the skillet, and when it's hot, add the beef filets. Sear each side for 3-4 minutes or until golden brown.
  10. Reduce the heat to medium-low and continue to cook the filets, turning occasionally until they reach your desired doneness (internal temperature of 120°F (49°C) for rare, 130°F (54°C) for medium-rare, and 140°F (60°C) for medium), about 10-15 minutes.
  11. Remove the skillet from the heat and top each filet with a slice of the roasted garlic butter.
  12. Allow the meat to rest for 5 minutes before serving.
