Ingredients

  • 4 bone-in pork chops, 1 inch thick
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil
  • 1 shallot, finely chopped
  • 1 cup dried figs, chopped
  • 1/4 cup red wine
  • 1/4 cup apple cider vinegar
  • 1/4 cup honey
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the pork chops generously with salt and black pepper. Drizzle with olive oil and rub to coat.
  3. Grill the pork chops for 4-5 minutes per side, or until they reach an internal temperature of 145°F. Remove from the grill and let rest for 5 minutes.

While the pork chops are cooking, prepare the fig compote.

  1. Heat a small saucepan over medium heat and add the shallot. Cook for 2-3 minutes, or until the shallot is soft and translucent.
  2. Add the chopped figs, red wine, apple cider vinegar, honey, cinnamon, ginger, and cloves to the saucepan and stir to combine.
  3. Bring the mixture to a boil, then reduce the heat to low and let simmer for 10-15 minutes, or until the figs are soft and the liquid has thickened.

Serve the pork chops with a spoonful of fig compote on top.
